Château de Ripaille (Savoie) with Rainbow trout

Classic Vin de Savoie, a personal import and souvenir from my recent trip to Chamonix and Mont Blanc. Château de Ripaille is located on the southern shore of Lac Leman (Lake Geneva) at Thonon-les-Bains, not far from Evian-les-Bains, famous for the bottled water.

Tasting notes for this bottle from 2022. Very fragrant. Full taste. Low acidity. Lemon, grapefruit and mountain herbs, hint of star fruit or even pomegranate. Lightly oaked, not obtrusive on the flavour and fragrance of the wine. A really good Savoie wine that impresses and keeps its allure to the end of the glass.
Fresh rainbow trout that we selected, live, at Brampton fish farm less than an hour away. Terry baked them in paper here in Keswick with flaked almonds and dressed them with chopped parsley, capers, fine beans and new potatoes. The cooked fish dissected really easily, the flesh separating readily from the bone. A fine flavour, strong but with the lightness you only taste with really fresh fish. The skin supple and also easily separated.
The fresh trout reminded me of fish similarly fresh from Nailsworth trout farm in the Cotswolds that we used to eat as a family when I was a teenager, although my Father would probably have selected as accompaniment a fine German wine like an Auslese from the Kaiserstuhl (Baden-Württemberg).
A memorable meal bringing memories of the Alps and the Cotswolds to our dinner table amongst the Cumbrian Fells.
